Caramel Cheesecake Stuffed Chocolate Chip Cookie Bars

I got this recipes off of Mel’s Kitchen Cafe. They were so good! The whole family gobbled them right up.

Ingredients:
Chocolate chip cookie dough
-1 cup of melted salted butter
-1 1/3 cup lightly packed brown sugar
-2/3 cup sugar
-1 tsp baking soda
-3/4 tsp salt
-2 large eggs
-1 tsp vanilla extract
-2 3/4 cup all-purpose flour
-2 cups chocolate chips

Caramel
-11 to 14 oz of soft caramel, unwrapped
-1 Tbl cream (I used milk because that’s all I had, it worked great)

Cheesecake
-8oz softened cream cheese
-1/2 cup powdered sugar
-1 large egg
-1/2 tsp vanilla extract

Instructions 
1. Preheat oven to 350° And grease a 9x13 pan
2. For the cookie dough, in a large bowl (or kitchen aid) add the melted butter, brown sugar, granulated sugar, baking soda, and salt. Stir together until we’ll-combined. Add the eggs and vanilla and mix well.
3. Stir in the flour and chocolate chips and mix until combined. Press half of the dough evenly on the bottom of the prepared pan.
4. For the caramel, combine the soft caramels and cream (or milk) and microwave for 1 minute intervals. Stirring in between until melted and smooth. Drizzle the warm caramel over the cookie dough and spread into an even layer.
5. For the cheesecake, in a medium bowl (or kitchen aid), add the cream cheese and powdered sugar and mix well until smooth. Spread the cheesecake filling evenly over the caramel layer.
6. Take the remaining cookie dough and flatten into disc shapes, about 1/8- 1/4 inch thick. It’s ok if there are small spaces. The entire top doesn’t need to be covered, just get as much as you can.
7. Bake the bars for 35-40 minutes until lightly browned on the edges and mostly set throughout. Remove to a wire rack to cool completely. Refrigerate bars until well chilled, 2-3 hours. These bars taste even better the next day after chilling.
8. Cut into squares and serve!

Snickerdoodle Blondies

This is a great dessert recipe when you are short on time. You most likely have all the ingredients in your pantry. And we think they are pretty good!  (I'll add a picture next time I make it)

Ingredients:
2 2/3 cups flour
2 tsp baking powder
2 cups packed brown sugar
1 cup salted butter, room temperature
2 eggs
1 Tbsp vanilla
Cinnamon topping:
2 Tbsp white sugar
2 tsp ground cinnamon

Directions
Combine the butter, eggs, brown sugar, and vanilla. I used my mixer and it worked great!
Add in the dry ingredients. (Flour, baking powder, )
Spread in a greased 9×13 dish. The batter will be thick almost like a cookie mixture.
Combine the cinnamon topping ingredients and sprinkle over the top.
Bake at 350 degrees for 25-30 minutes or until top springs back when pressed. Once it cools, it will harden more. cut into square like you would with brownies.

Sugar Cookies

Sugar cookies are one of my favorite cookies... but I am really picky about what kind. I personally like soft ones (not hard) that don't have a strong cream of tarter/baking soda taste and I don't really care for store bought. I have tried a lot of recipes over the years (I lost this one for awhile and was trying to find a new good one) and I always come back to these. I have also included my favorite frosting.

PS If you don't feel like rolling them out...Make the dough and immediately roll into balls. Place the balls on the cookie sheet and then take a cup and dip the bottom of the cup in a bowl of sugar and then use the cup to press down the cookies. Bake like normal. Still able to frost and still delicious.

Deluxe Sugar Cookies

1 cup butter, softened
1 1/2 cups confectioners sugar
1 egg
1 1/2 t vanilla
2 1/2 cups all purpose flour
1 tsp. baking soda
1 tsp. cream of tartar

Mix butter and confectioner's sugar till smooth. Add egg and vanilla. Blend in flour, soda, and cream of tartar. Cover and chill 2-3 hours. Preheat oven to 375. Divide dough in half. Roll each half 3/16 inch thick on lightly floured surface. Cut into desired shapes. Place on lightly greased baking sheet. Bake 7-8 minutes or until very light brown on edge (do not over cook or they will be crunchy)

Makes about 5 dozen 2 inch cookies

Butter Frosting

1/3 cup butter
4 1/2 cups powdered sugar
1/4 cup milk
1 1/2 tsp. vanilla
milk
food coloring (optional)

1. Beat butter until fluffy. Gradually add 2 cups of the powdered sugar, beating well. Slowly beat in the 1/4 cup milk and the vanilla.
2. Slowly beat in remaining powdered sugar. Beat in additional milk if needed to get spreading consistency. Add food coloring if desired.

Homemade Oreo Cookies

These are a fun treat and easy to make! These look like whoopie pies but they taste completely different. Less cake-like and more cookie-like. I made the frosting for these half white and half blue for the 4th of July. We always freeze ours and eat them right out of the freezer. They taste the best that way!

Ingredients:

  • 2 (18 ounce) boxes devil's food cake mix
  • 4 eggs, beaten well
  • 2/3 cup oil
  • 1 tsp vanilla
Cream cheese frosting
  • 2- 8oz cream cheese
  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • Mix cream cheese and butter together until well blended. Mix in vanilla then gradually add powdered sugar. Refrigerate until ready to use.
Directions:
  1. Mix cake mixes, eggs, vanilla and oil together well.
  2. shape into balls
  3. Bake at 350*F for 8-10 minutes. They are done when the tops looked cracked.
  4. Move cookies to a cooling rack
  5. Once cookies have cooled, add frosting to bottom of one cookie and sandwich with another cookie on top.
  6. Freeze.

Oatmeal Cookies

There isn't anything new or different about this Oatmeal cookie, but it's just plain good!!

Ingredients
  • 1 cup butter
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 cups flour
  • 2 3/4 cups oatmeal
  • 2 cups chocolate chips
Directions
  1. Cream together the butter and sugars. Add eggs and vanilla. Beat until light and fluffy. Add Baking soda, powder, and salt and mix. Add flour, oatmeal and chocolate chips. Mix until combined.
  2. Bake at 350 degrees for 10-12 minutes.

World's Best Chocolate Chip Cookies

I know we all know this recipe but I thought I'd put it on here for easy access.

Cream for 10 minutes: 1 lb real butter
                                    1 1/2 cups sugar
                                    2 cups dark brown sugar

Add 3 eggs and cream for 3 more minutes

Add:
                                    2 tbs vanilla
                                    1 tsp salt
                                    1 1/2 tsp baking soda
                                    6 cups flour
                                    3-6 cups chocolate chips

Spoon onto ungreased cookie sheet. Bake at 350* for 11 minutes

Pumpkin Snickerdoodles

2 sticks butter (1 cup), at room temperature
1 1/2 cups granulated sugar
3/4 cup pure pumpkin puree
1 large egg
2 tsp pure vanilla extract
3 3/4 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
ROLLING SUGAR:

1/2 cup granulated sugar
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp allspice

1. In a large bowl, cream butter with an electric mixer until fluffy. Add sugar and pumpkin puree and beat well. Mix in egg and vanilla, scraping down sides of the bowl to incorporate all of the ingredients.
2. In a medium bowl, whisk together flour, baking powder, salt and ground cinnamon. Beat flour mixture into liquid mixture a little at a time until incorporated.
3. Cover dough with plastic and chill at least an hour, or until dough becomes slightly firm.
4. When ready to bake, preheat oven to 350°F. Line baking sheets with parchment paper (or spray with nonstick spray). Mix rolling sugar in a small bowl.
5. Remove cookie dough from refrigerator. Use a medium cookie scoop (1 1/2 Tbsp.) or a large spoon to scoop out dough and roll into balls. Use your hands to roll the balls in the cinnamon sugar and make sure they’re coated really well. Place 2 inches apart on the prepared baking sheets. Use a glass with a nice, flat bottom to dip in sugar and flatten the balls.

6. Bake at 350°F. for 10 to 14 minutes, or until they are slightly firm to the touch. Let cool on baking sheets for 5 minutes or so, then remove them to a wire rack to cool completely.
Yield: About 3 dozen
