Mom's Mud Pie

The one and only! I know we all LOVE this dessert! Jorden always requests this for his birthday instead of cake. 



  • 1 package Nabisco chocolate ice box cookies, crushed
  • 1 cube butter, melted
  • combine, press into 9x12 pan, freeze
Spread 1/2 gallon vanilla ice cream over crumbs, freeze

Melt 2 squares unsweetened chocolate with 1 cube butter, cool a little and add 2 beaten eggs and 2 cups powdered sugar. 
Spread on top of ice cream and freeze
Top with cool whip and cashews.

Taco Pasta Bake

  • 1/2 – 3/4 of a bag of large noodle pasta like zitiapprox. 
  • 1lb of ground beef
  • 1 pkg/envelope of taco seasoning
  • 1C water
  • 1/2 pkg of cream cheese
  • 1 1/2C shredded cheese 

Directions
1. boil pasta until just cooked, drain, run cold water over it
2. brown ground beef
3. mix together taco season and 1C of water, pour over cooked beef and let simmer for about five minutes until the liquid has reduced
4. add the 1/2 pkg of cream cheese to the beef mixture, stir until melted and combined, remove from heat
5. put pasta in your casserole dish or pot, mix in 1C of the shredded cheese
6. top pasta and cheese with beef mixture, gently mix until the pasta is coated
7. top with remaining 1/2C of shredded cheese
8. bake at 350 uncovered for approx 30 minutes





Pesto Chicken Stuffed Shells

16 jumbo pasta shells, cooked and drained
4 oz cream cheese, softened
1 cup freshly grated Parmesan cheese plus 1/4 cup for topping
3 tablespoons prepared pesto
2 cups shredded cooked chicken
2 cloves garlic, minced
salt and pepper to taste
This is the pesto sauce I used. It was in the same aisle as the spaghetti sauce.


Combine all the ingredients and stuff into the cooked jumbo shells. 
Sprinkle with the 1/4 c. Parmesan cheese. 
Bake at 350 uncovered for 30 minutes or until bubbly.


World's Best Chocolate Chip Cookies

I know we all know this recipe but I thought I'd put it on here for easy access.

Cream for 10 minutes: 1 lb real butter
                                    1 1/2 cups sugar
                                    2 cups dark brown sugar

Add 3 eggs and cream for 3 more minutes

Add:
                                    2 tbs vanilla
                                    1 tsp salt
                                    1 1/2 tsp baking soda
                                    6 cups flour
                                    3-6 cups chocolate chips

Spoon onto ungreased cookie sheet. Bake at 350* for 11 minutes


Pizza Hut Copycat Recipe

K guys! This is a good one! We love pizza at our house. We either make this one or the pizza roll-up which I will post about too! 
This recipe makes 3, 9inch pizza and serves 4.

1 1/3 cup warm water (105 degrees F)
1/4 cup non-fat dry milk
1/2 teaspoon salt
4 cups flour
1 tablespoon sugar
1 package dry yeast
2 tablespoons vegetable oil (for dough)
9 ounces vegetable oil (3 ounce per pan)
butter flavored cooking spray

On my lazy days I just use canned pizza sauce but it's better to make this
Sauce
1 can (8 ounce size) tomato sauce
1 teaspoon dry oregano
1/2 teaspoon marjoram
1/2 teaspoon dry basil
1/2 teaspoon garlic salt

1. Put yeast, sugar, salt, and dry milk in a large bowl. Add water and stir to mix well. Allow to sit for two minutes. Add oil and stir again. Add flour and stir until dough forms and flour is absorbed. 
2. Turn out on to a flat surface and knead for about 10 minutes. Divide dough into three balls. In three 9" cake pans, put 3 Oz. of oil in each making sure it is spread evenly. Using a rolling pin, roll out each dough ball to about a 9" circle. Place in cake pans. 

3. Spray the outer edge of dough with cooking spray. Cover with a plate. Place in warm area and allow to rise for 1 to 1 1/2 hours.

Sauce: 

Combine ingredients and let sit for 1 hour. 

For Each Nine Inch Pizza: Preheat oven to 475 degrees F Spoon 1/3 cup sauce on dough and spread to within 1" of edge. Distribute 1 1/2 Oz. shredded mozzarella cheese on sauce. Place toppings of your choice in this order: Pepperoni or Ham Vegetables Meats (cooked ground sausage or beef) Top with 3 Oz. mozzarella cheese Cook until cheese is bubbling and outer crust is brown.






White Chicken Enchiladas

 We love enchiladas at our house, but it seemed like every recipe I tried made the tortillas soggy. Well I finally found a recipe that doesn't! This was really easy but just know the sauce made for this does not freeze well. If you want to make it as a freezer meal, make the enchilada part (stuff the tortillas) and make the sauce the day of.

  • 10 soft taco shells (I used 8 burrito size)
  • 2 cups cooked, shredded chicken. I used a rotisserie chicken-it made it easy and the flavor was great!
  • 3 cups shredded Monterrey Jack cheese
  • 3 tbsp butter
  • 3 tbsp flour
  • 2 cups chicken broth
  • 1 cup sour cream
  • 1 (4 oz) can diced green chillies
  1. Preheat oven to 350*. Grease a 8x11pan (or a 9x13 if you are making 10)
  2. Mix chicken and 1 1/2 cup cheese. Roll up in tortillas and place in pan.
  3. In a medium saucepan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly.
  4. Stir in sour cream and chillies. Do not bring to a boil. You don't want curdled sour cream.
  5. Pour over enchiladas and top with remaining cheese.
  6. Bake 22 minutes and then under high broil for 3 minutes to brown the cheese.



Great served with rice and beans! We also topped ours with sour cream and salsa.

Amish White Bread

This is my go to white bread recipe that doesn't require a bread machine.

  • 2 cups warm water
  • 2/3 cups white sugar
  • 1 1/2 tbl active dry yeast
  • 1 1/2 tsp salt
  • 1/4 cup vegetable oil
  • 6 cups bread flour
  1. In a large bowl, dissolve sugar in warm water, then stir in yeast. Allow to proof until yeast resembles a creamy foam.
  2. Mix salt and oil into yeast. Mix flour 1 cup at a time. I love to use my kitchen aid with a bread hook for this part (but you don't have to).

    3. Knead dough on lightly floured surface until smooth. Place in a well oiled bowl, then turn dough     to coat. Cover with a damp cloth. Allow to rise until doubled, about 1 hour.


     4. Punch dough down. Knead for a few minutes and divide in half. Shape into loaves & place into 2 oiled/sprayed 9x5 loaf pans. Allow to rise for 30 minutes or until dough has risen 1 inch above pans.

    5. Bake at 320* for around 42 minutes.



I've also done this recipe with chunks of cheese and Parmesan mixed in. I just increased my cooking time.
